    Amaranth, Quinoa, and Oats with Kiwi and Strawberries

    This grain bowl is great for breakfast or a midday pick me up. It's got three healthy grains (amaranth, quinoa, and oats) and it's topped with protein packed nut butter and sweet fresh fruits. It's a treat for the eyes and the stomach. 


    Ingredients

    amaranth
    3
    tablespoons
    Quinoa
    1 1/2
    cups
    almond milk
    1/2
    cup
    regular oats
    2
    tablespoons
    almond butter
    2
    kiwifruit, peeled and diced
    1/2
    strawberries, hulled and quartered
    2
    teaspoons
    toasted sesame seeds
    2
    tablespoons
    honey
    Directions
    Put the amaranth and quinoa into a medium pan, pour in the almond milk and 1 1/2 cups water and place over medium heat. Bring to a simmer, cover, and cook for 15 minutes.
    Add the oats and reduce the heat to medium-high. You may need to add up to 1/4 cup more water if most of the liquid has been absorbed. Cook stirring for 7–8 minutes or until the porridge reaches the desired consistency. Remove from the heat.
    Divide the porridge between 2 bowls. Top with the almond butter, kiwifruit, and strawberry pieces. Finally, sprinkle over the sesame seeds and drizzle with the honey to serve.
