    Abuela’s Apple Pie

    Bursting with juicy diced apples, Abuela's Apple Pie is an instant fall favorite that begs to be served with a scoop of dulce de leche ice cream on top. The filling is an updated version of what Grandma used to make, mixing apple, agave, tequila and cinnamon, enveloped in a rustic flat pie perfect for any night of the week.

    large apples, peeled, cored and diced

    agave

    teaspoon
    cayenne

    tequila
    Directions
    Preheat oven to 350 F.
    In a food processor pulse flour, butter, salt and sugar until coarse crumbled form.
    Add water, 1 tbsp at a time until the dough begins to form and separates from the wall of the processor.
    Pour crumbly dough out on a floured surface and shape the dough into 4 disks pressing it down with the palm of your hand. Do not over work it.
    Sprinkle some flour on disks, cover in plastic wrap and refrigerate for 1 hour.
    In a small bowl mix apple, agave, cayenne and tequila. Allow to marinate while dough is resting in refrigerator.
    Remove disks and allow to sit at room temperature for 5-10 minutes until soft enough to roll out.
    Roll out disks to 1/8 inch thickness.
    Place disk on a baking sheet so that the center is on a corner of the sheet.
    Take 1/4 apple mixture and place in middle of rolled out disk. Gently fold crust up and onto the filling so that it resembles a volcano, with a large portion of the apple mixture still visible.
    Repeat this process with the remaining apple mixture and dough.
    Bake pies for 20-25 minutes until crust is golden and apples are reduced in size.
    Enjoy warm or fresh from the oven with a scoop of ice cream.
