Queso Fundido is a traditional Mexican appetizer with chorizo, poblano pepper, onion and melted Chiahuahua cheese. This version, developed by chef Tom Van Lente, is simple and easy, getting you to that melted goodness in 30 minutes!

INGREDIENTS

chorizo or other loose sausage

poblano pepper

small white onion

teaspoon
oregano

Chihuahua cheese, shredded

corn tortillas
DIRECTIONS
Preheat oven to 350F. Brown sausage in a sauté pan. Meanwhile, slice pepper and onion into julienne strips.
Once sausage is cooked through, drain on a plate and cool to room temperature. In same pan, with excess grease removed, add onions and peppers and cook until soft. Finish with oregano and remove from heat.
In a small oven proof dish sprinkle 1/2 cup cheese. Add sausage and peppers and onions and top with remaining cheese. Bake in oven until golden brown and bubbly.
Serve queso fundido with warm tortillas.
