Sometimes even vegetarians miss the meatiness of chili-topped nachos. Meatless Meatball Nachos provide the same taste but without the ground beef and the soggy chips chili often brings.
Preheat oven on broil.
Crumble meatless meatballs and put in a large saucepan, sprinkle taco seasoning over, add 1/3 cup of water and stir. Cook over medium high heat for 5 minutes, stirring occasionally.
Arrange chips on a platter that can be used in the oven or on broiler pan.
Sprinkle cheese on and top with meatless mixture.
Broil for 3 minutes or until cheese is melted. Remove from oven and top with tomatoes, onion, jalapenos, shredded lettuce, cilantro, and olives.
Add guacamole, salsa, and/or sour cream before serving.
