This winter, warm up with this hearty and healthy Vegan Moroccan Plantain Stew, made with sweet plantains and spiced with hints of orange, cinnamon, and cardamom.

INGREDIENTS

yellow plantains, quartered and diced

red onion, diced small

medium bell pepper, diced small

tablespoon
fresh garlic, chopped
2
carrots, peeled, halved and sliced

zest of 1 orange

bay leaves

sprigs of thyme

orange juice

whole peeled tomatoes, hand crushed

drained Manzanilla olives, pitted
DIRECTIONS
In a small saute pan toast cardamom, cumin, coriander, paprika, clove, turmeric, and cinnamon (about 2 minutes).
In a separate deep pan sear plantain until golden brown, reserve for later.
In a pan over medium heat, sweat down onions, pepper, garlic, and carrots. Add toasted spice mixture.
Add zest, bay leaves, thyme, and orange juice reduce for 10 minutes.
Add hand crushed tomatoes and olives simmer on low heat, covered for 30 minutes.. Adjust salt and pepper to taste.
Add plantains, simmer for 10 minutes, and serve.
