Andina Restaurant is a Modern-Peruvian Portland favorite that “aspires to revive native, pre-colonial ingredients and incorporate them into creative, modern presentations of the highest international caliber.” Already we’re sold. Chef Hank Costello is planning a three-course, prix fixe menu that includes tapas, entrées, and dessert. The star of the show will of course be a heritage turkey, “pavo novoandino”.
