Easy Breakfast To Go: Chia & Oats with Blueberry

My grandmother used to say: ¨Eat breakfast like a king, lunch like a prince, and dinner as a beggar.¨ She was so right. Breakfast is the most important meal of the day. It gives you the energy you need to get going and fills you up with vitamins and minerals so that you can confront tough choices with easy decisions. But really, who has time to sit down and enjoy a complete breakfast?

I don't know anybody who wakes up even a single minute before their alarm calls them out of bed. Most of us just grab something for the road: a cereal bar, a piece of fruit, the first cup of coffee we can find. And while I understand the rush to get out of the house and hit the road, you can still have a nutritious breakfast and make it out the door fast! 

This is where this recipe comes in handy. It's full of fiber, vitamins, and minerals and it's so easy to make that you won´t believe how good it is for you. The only trick is to prepare a bit ahead. I know that at night, when the kitchen is clean and the kiddos are in bed, the only thing you want to do is sit down and enjoy a few minutes of peace. But just ten minutes of preparation will give you all the benefits of a great breakfast. Just mix the oats, the chia, and flax seed with some milk, divide the mixture in four jars, and place it in the fridge. In the morning, simply top it with fresh fruit and hit the road! 

Breakfast on the Go

  • 3/4 cup oatmeal
  • 3 tablespoons chia
  • 1 tablespoon ground or whole flaxseed
  • 1 tablespoon cinnamon
  • 1 1/2 cups almond milk or rice
  • 1 banana
  • 3/4 cup blueberries
  • 4 teaspoons maple syrup
