The next time you get the urge to bake, pull out your muffin tin and make chocolate chip cookie shots, chorizo and egg “muffins,” or baked oatmeal (perfect for breakfast on-the-go). Chocolate Chip Cookie Shots
You can make chocolate chip cookie shots or bowls in your muffin tin — bake and fill them with your favorite milk (or ice cream), and their ready to eat! You can make your own cookie dough from scratch or use store bought cookie dough. To a prepared muffin tin, add cookie dough into each muffin making sure the dough comes up the sides of the tin, and bake as package suggests. Chorizo and Egg Muffin
You can even make breakfast on-the-go in your muffin tin. Scramble cooked chorizo, eggs, chopped scallions, and Mexican blend cheese; add the egg mixture into your non-stick muffin tin (making sure to leave about an inch of space at the top of each muffin). Bake at 400 degrees for 30 minutes or until the eggs have set and breakfast is served.
Mix 1/2 cup of quick cooking oats with 1 cup of milk, 1 teaspoon of cinnamon, and 1 teaspoon vanilla. Add oatmeal into your muffin tin, leaving about an inch empty at the top of each muffin. Add your preferred toppings (fruit, nuts, even chocolate chips) and ake at 350 degrees for 30 minutes until the oatmeal has set. Let cool for 5 minutes and enjoy!
