Tomorrow night, acclaimed French chef, Daniel Boulud, will introduce a new menu of Colombian dishes in honor of Café Bouluds Executive Sous-Chef Cesar Gutierrez.

We cannot imagine a collaborator more deserving of the recognition. By 16 Gutierrez was selling drugs, dropping out of high school, and getting arrested. After this rude awakening, he picked himself up by his bootstraps and threw himself into the culinary world… starting at Burger King. After many years, a couple scholarships, and a slew of positions at big name restaurants (Daniel, D.O.M., and Manresa to name a few), he now finds himself curating a menu that addresses “many different approaches to Colombian flavor and cuisine.” 

This new series, Le Voyage, will include a ceviche de mariscos inspired by his dad’s recipe, a deep-fried snapper remaniscent of Colombian’s coast, and (of course) a bandeja paisa, complete with fried pork belly and Colombian-style arepa.

Though tomorrow’s inaugural dinner is already sold-out, Café Boulud will offer Le Voyage for the remainder of the summer.
