Craving milcaos and a glass of Chilean Cabernet Sauvignon? Now you won’t have to go far to find them because Omni Hotels is bringing Chile right here to the United States.
Now through December 31, select properties nationwide will be presenting dedicated Chilean dinner and bar menus with hand selected wines, all as part of ¡Destinación Chile!, an annual installment of the brand’s "Flavors of the World" culinary series.
Every year, the Omni group picks a region of the world to explore as a way to expose the hotel chefs to world cuisines. After days or weeks spent in a chosen country on intensive training, the chefs and sommeliers come back to their properties inspired and educated and ready to present what they’ve learned.
This year Omni partnered with Wines of Chile and over the summer Omni chefs visited the San Antonio campus of the Culinary Institute of America for a three- day training in Chilean cooking. Then, 30 Omni food and beverage directors traveled throughout Chile for a week to meet winemakers, taste wine, and make their selections.
And they’ve made some delicious choices! At participating hotels, this is a smattering of what you’ll find on the menu: Costillar con Pure Picante, pork ribs slowly cooked in beer and palm honey with potato puree; Bacalao con Tomaticán, seared sea bass with braised tomato, yellow corn, cilantro salad; Tres Leche Cake; and Arroz con Leche y Salsa de Manjar, rice pudding with dulce de leche.
With dinner, guests will have their choice of eight to 11 hand-selected Chilean wines including Pinot Noir, Syrah, Sauvignon Blanc, Chardonnay, and Riesling, as well as pisco cocktails, of course.
