Vegetable Croquettes

Believe it or not, summer is almost over and back to school season is upon us. Although it's hard for me to believe, my daughter is about to start kindergarten! This new phase of life brings us all joy and expectation, but I admit that my little one and I are also a bit anxious. When we bought a new backpack and lunch box for the occasion, I felt as if I was starting kindergarten, too! 

Now, while my daughter's lunch box is a hit, the foods I want to fill it with are often difficult to convince my daughter to eat. Like most moms, I am disappointed when I see her avoiding healthy, varied and a little more elaborate meals!  But I am not giving up! 

Wondering how I could help other moms with this problem and offer ideas on a quick and easy morning lunch box -- especially for picky eaters like my daughter -- I focused on adding more vegetables and organic foods into her diet. The result? This vegetable croquette. By combining a beloved dish everyone knows and loves -- the classic croqueta -- with a few healthy ingredients, my daughter gets her fill of vitamins and greens, and actually asks for seconds!

Super simple to make, you can either prepare these croquettes the night before or prep the ingredients for an easy morning sauté. Another great benefit of croquettes? They can be eaten cold or hot, making them an ideal lunch-box item. This particular mix of vegetables (squash, carrots, and potatoes) has passed the taste test in my home, and I hope it does the same in yours!

Vegetable Croquettes

  • 1/2 small squash
  • 1 medium carrot
  • 2 potatoes
  • 1/2 white onion (optional)
  • 3 eggs
  • 2 tablespoons Parmesan cheese
  • 5 tablespoons flour
  • salt and pepper
