Spring Fritters

Looking for a sweet tiny bite for your next party? Why not try fritters? Sweet corn and fresh peas are added to a fluffy pancake batter and fried until golden brown. These fritters are great served with a spicy dipping sauce or drizzled with honey or maple syrup. In the South, fritters are enjoyed at breakfast or paired with a heaping plate of BBQ. Fresh corn gives these fritters a sweet bite while peas give them a light spring touch.

The best part about this recipe is that this batter is really a blank canvas for any vegetable you have on hand, such as corn, zucchini, carrot, sweet potatoes or even apples. Simply mix and match your fillings to create a new fritter to showcase at your next event or family gathering. 

A few notes: Use a tablespoon or cookie scoop to drop the fritter batter into the fryer, this keeps the fritters a consistent size. And keep a close eye on them - they do puff up quickly (and burn just as fast). Just fry until golden, drain on paper towels, and keep warm in the oven.  And finally, make a double batch. These go quickly in my house; I find that tiny hands love anything they can dip, so make plenty.    

Spring Fritters

  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup milk
  • 1 egg
  • 1 tablespoon butter, melted
  • 1 ear of corn, kernels removed or ½ cup frozen corn thawed and drained
  • 1/2 cup fresh or frozen peas, thawed and drained
