With this in mind, I have prepared a quick and easy, light and healthy Salmon Salad with a Tropical Mango Vinaigrette. This recipe is perfect for those looking for an easy, fast, delicious, and healthy alternative.

I have also found that this is a perfect recipe for those watching their caloric intake. Having just had a second child, I'm looking for ways to get rid of those extra pounds. And like any busy mom, I have less time to prepare sophisticated dishes with two children looking for my attention. This salad serves as a great addition to your weekly repertoire. I have accompanied this salad with mango vinaigrette. This particular dressing adds a different touch to the salad, combining flavors from the Atlantic with a touch of Caribbean flair. My favorite part? The seeds! Sunflower, chia and sesame seeds add crunch, texture, and a lot of energy to this summer salad.

Salmon Salad

  • 12 ounces mix lettuces (tender green tango, red oak, sweet frisee & Lollo rossa)
  • 1/2 avocado
  • 1/2 red onion
  • 4 ounces alfalfa sprouts
  • 1 pound salmon fillet
  • 1 tablespoon sesame seeds
  • 1 tablespoon chia seeds
  • 1 tablespoon sunflowers seeds
  • 3 1/2 ounces mango puree
  • 1 1/2 tablespoons honey
