Healthy Recipe of the Week: Quinoa Stuffed Red Peppers

Happy New Year and congratulations on taking the first steps towards a healthier you! We all know that exercise is key to maintaining a healthy lifestyle, but your diet is just as, if not more, important.  So, each week, we'll be presenting a healthy recipe using nutritious, unprocessed ingredients like raw fruits, vegetables, whole grains, and lean proteins. 

In these recipes, we will move past frying, instead roasting, baking and sautéing our dishes. As a rule, try to use olive oil for day-to-day meals, watch your sugar intake, and pay attention to portion size. As many of us know, Latin portion sizes are often massive, usually big enough for three, so mind what is on your plate and how much you consume. And remember, being healthy isn't about deprivation, it's about finding flavors, textures and combinations that your body and your taste buds enjoy.

With that in mind, our healthy recipe this week is Roasted Red Peppers Stuffed with Power Quinoa Salad. Quinoa has been a staple in the Latin kitchen, dating back to pre-Colombian Andean civilizations in South America. A complete protein source, much like meat and dairy, quinoa clocks in at over 8 grams of protein per cooked cup. The Food and Agricultural Organization of the United Nations has even named 2013 “The International Year of Quinoa.” 

Our main ingredient, sweet red pepper, is high in vitamin C, iron, and fiber and will keep you feeling full longer, while the Power Quinoa Salad is made of quinoa, sautéed onions and peppers, diced cucumber, chickpeas and black beans dressed in a simple olive oil and lemon juice vinaigrette. We chose these ingredients because cucumber is low-cal, clocking in at 8 calories per half cup!  And, in this salad, cucumber adds crunch to the softer sautéed peppers and onions, which add extra vitamin power, color, and antioxidants to strengthen your body on a cellular level from the inside out. Lemon juice gives this salad a vitamin C boostm while olive oil provides the healthy fats your body needs to reenergize, recover and rebuild for tomorrow.

A nutritious dish that is colorful, tasty, and ready in 20 minutes, these stuffed roasted red peppers have got you covered. Enjoy with a side salad and a heart healthy glass of wine. Toast to starting the year off right.

Roasted Red Peppers Stuffed with Power Quinoa Salad

  • 2 sweet red peppers
  • 1/2 cup mixed sweet red and green pepper strips
  • 1/4 cup Spanish onion, sliced
  • 1/2 cup garbanzo (chickpeas) beans, cooked
  • 1/4 cup black beans, cooked
  • 1 cup quinoa, cooked
  • 2 tablespoons red onion, minced
  • 2 tablespoons cubed cucumber
  • 1 tablespoon Cotija cheese, crumbled
  • 2 teaspoon olive oil
  • 1/8 teaspoon cayenne
  • 1/2 tablespoon lemon juice
  • salt and pepper to taste
