Smashed potatoes are a perfect way to trick our mind into thinking we're eating junk food. I know it would never be the same as getting a potato chip straight out from a hot kettle or a french fry out of the fryer but believe me, this is a healthier way to enjoy a veggie with a naughty rep.
Potatoes are considered part of the nightshade vegetable group. There are almost 2,800 different species of this family. Tomatoes, red bell peppers, and eggplants are all part of this family. The thing with nightshade fruits and vegetables is that they have a ton of alkaloids. Some people are very sensitive to this compound and they can experience bloating, gas, or joint pains. And on top of that, potatoes are prepared and eaten in various unhealthy ways. So I hacked the junk food and turned it into a healthy food.

If I serve them as an appetizer, I like to use them as a base for a fresh and delicious salsa or some type of topping. They're also great with a dollop of crema fresca and some scallions or served with chipotle mayo. This recipe is also a very good way to reheat potatoes, you could cook them the night before and the moment you need them, place them in the pan, smash them, season them, and then bake.
I am against junk food as is, it has nothing but chemicals and nasty ingredients for our body.
