Cilantro Vinaigrette Salad

This salad is great for when you want to serve a truly original and elegant dish that's also light and fresh. It's colorful and lively but actually quite simple to prepare. A mix of all the wonderful raw vegetables your body craves, this vibrant salad is full of dark greens, alfalfa sprouts, red onion, beet, radish, avocado, and hearts of palm.

If you're not familiar with hearts of palm, here's a quick primer: they are a tangy veggie from the palm tree, somewhat similar to artichokes. Often served as an appetizer and accompanied by mayonnaise, or as a filling in salads and sandwiches, you can find them in the grocery store in glass containers or cans, though unfortunately, when consumed in this way, the lose many of their nutritional properties. So, try to find fresh hearts of palm to keep things as healthy as possible!

Though popular in South America, I often find myself explaining exactly what hearts of palm are to the cashier at the grocery -- which is a shame. So, in the spirit of utilizing them in my Latin-style cooking, I have accompanied this hearts of palm rich salad with cilantro lime vinaigrette. I am almost certain you will fall in love with it.

Cilantro Vinaigrette Salad

For the Cilantro Vinaigrette

  • 1 handful of chopped fresh cilantro
  • 3 1/4 ounces red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon mustard
  • 1/2 teaspoon honey

For the Salad

  • 4 small hearts of palm
  • 1 beet
  • 1 radish
  • 1/2 red onion
  • 1/2 avocado
