Brunch Stuffed Poblanos

It’s easy to prepare a flavorful and nutritious meal if you know where to start. Brunch Stuffed Poblanos are delicious, a cinch to make, and a great way to wake up with spicy chiles and energy-inducing protein that will fuel you all day long.

The other healthy but tasty ingredients in this power-packed recipe are poblano peppers, potatoes, and fresh pico. Poblanos are wonderful in this dish, adding a mild spice as well as 4 grams of fiber and 2 grams of protein per chile. The potato hash, with anti-inflammatory garlic, antioxidant-filled olive oil, and vitamin rich parsley is both nutrient dense and flavorful. Topping the poblanos off with pico de gallo adds freshness and extra spice bite after bite.

  • 2 large poblano peppers
  • 1 cup diced roasted potatoes

  • 1/2 cup pico de gallo
  • 4 thin slices of jalapeño
