Maybe it’s just my kids, maybe it’s the age they’re at… but boy, can they eat. All. Day. Long. They eat a healthy breakfast, take a hearty lunch to school, and often request mid morning snacks. And that’s where these vegan banana bread muffins come in. 

For those daily snacks, I used to slip a cereal snack bar into their bags. But after studying up on how to read a label, I realized I was buying cereal bars loaded with some chemicals that I don’t want my kids to eat. So I started to experiment with muffin recipes and finally stumbled on this one. Think of this recipe as a base, a blank canvas, to which you can add all the goodies in your pantry.  

Find walnuts? Turn these muffins into banana walnut treats! Have chocolate? There is nothing more delicious in this world than chocolate and banana together! Use dark chocolate and with no sugar and you have healthy treats. 

As Michael Pollan says, “Eat all the junk food you want as long as you cook it yourself.” This is the main idea behind these muffins: make them with whole foods, whole ingredients, and  better sugars. Ingredients that are closer to nature, less processed, and with no chemicals or funky ingredients.
