Don’t you just love a recipe that can pull double duty? Or the ones that make great leftovers? For me a great leftover recipe is a dish that you can transform into something else. Lets say roasted chicken, it would make amazing roasted chicken sandwiches. Or some refried black beans make delicious tostadas or tacos. Or any cooked grain, will make it to my salad the next day. This peach and raspberry crumble is the perfect recipe for a great healthy dessert and is also a great dish for breakfast.

I love crumbles because you could bake them in individual ramekins or as one big dish. They are also a great dessert to prepare in advance when entertaining or have around for cozy and lazy nights. When it’s done and you take it out of the oven, the fruit is bubbling and the nuts and the oats smell amazing. And the flavors will taste even better with a huge scoop of vanilla ice cream for dessert or with a big dollop of greek yogurt for breakfast.

This recipe is amazing with peaches and raspberries, but the topping would work well with other stone fruit. You could make it with just prunes or peaches and blueberries. Another great combination would be mango and strawberries. The topping is also interchangeable. Use almonds or pecans instead of walnuts.

Eat it straight out of the oven or at room temperature. Believe me, this recipe is so good, the temperature does not matter at all.
