As the summer kicks into full gear, we're loath to turn on our stove. No need to heat up our apartments when there are so many delicious, refreshing recipes out there that don't require fire: cocktails, no bake desserts, and of course, gazpachos. Gazpacho, usually a soup made of raw veggies with a tomato base and served cold, came to us via Spain (and perhaps, before that, through the Moors and the Romans), where innovative cooks were looking to make the most of their summer bounty and keep cool during the sweltering months. Now, you can find gazpacho on many a menu and prepared an infinite number of ways. This summer, we're loading up on fresh fruits and vegetables and getting to chopping.
