Overnight oats have been trending for some time. They are delicious and nutritious, but can be kind of blah. It’s easy to Latinize overnight oats by bringing in flavors reminiscent of sand and sun.
Before we do though, let’s pay homage to the original plus learn the basic formula.
Mastering the technique is key to jazzing up any recipe. These overnight oats are super easy and pair perfectly with berries and nuts. Simply combine whole rolled oats, full fat milk, sugar, and vanilla extract and let sit overnight. You'll wake up to a creamy, sweet, and filling homey breakfast.
So this may qualify as dessert but hey, who’s complaining? This version is way healthier than its custard counterpart. Substitute the regular milk with evaporated milk and blend with one date with one tablespoon of coconut sugar instead of granulated sugar. Dates have magic powers and somehow taste just like caramel!
Horchata is tailor-made for oatmeal. Why these two have not met before is beyond us but we’re glad they’re finally an item. If you don’t have horchata around, replace milk in the original recipe with rice milk and add a quarter teaspoon each of cinnamon and vanilla extract.
