Tamarillo and Ají Sauce (Ají de Tomate de Arbol)

    I decided to give a twist to this spicy sauce and use habanero peppers, which are very spicy, but have a sweet, fruity quality to them.  Use this sauce to flavor fish tacos - even as a spicy dressing for a salad.  If the spicy proves to be too much to handle, you can tame this down by squeezing on some extra lime juice.

    Ingredients

    tamarillo pulp

    habaneros (roughly chopped)

    scallions roughly chopped (only the white portion)

    tablespoon
    cilantro (roughly chopped)

    teaspoon
    vegetable oil
    *
    juice of 1 lime (more if desired)
    Directions
    Step 1
    In a blender or food processor, combine the tamarillo pulp with the water.
    Step 2
    Add the habanero peppers and puree. Add the rest of the ingredients and pulse 1-2 more times until combined.
    Step 3
    Taste for seasoning and heat. Should you want to tame the heat, squeeze some more lime juice and add a pinch of salt.
