Ceviche is classic beach food across the coasts of Latin America. Even though fish based ceviche is most common, oysters and shrimp are also terrific choices. We love this simple, fresh oyster ceviche as an appetizer, or use it to fill an avocado for a light supper.

Quick tip: If you are too busy to make your own tostadas, simply buy unsalted tortilla chips at the supermarket. Place them in a baking pan, and heat them for 5-8 minutes in preheated 300° oven. Remove them from the oven, and sprinkle them with smoked sea salt while they are still warm.
