Milloquín

    Milloquín are tasty little chilled balls of creamy pureed beans flecked with cilantro, red onion and a bright touch of lemon juice.

    Ingredients

    cooked white beans or split peas, well-drained

    minced red onion
    2
    tablespoons
    minced cilantro leaves
    2
    teaspoons
    fresh lemon juice
    1/2
    teaspoon
    kosher salt
    Directions
    Step 1
    Puree the beans in a food processor, until smooth. If they will not hold together as a thick, moldable dough, heat the beans in a non-stick skillet over low heat, stirring constantly for 5 to 7 minutes, to thicken.
    Step 2
    Allow beans to cool for 20 minutes, stirring occasionally.
    Step 3
    Add the red onion, cilantro leaves, lemon juice and salt; mix well.
    Step 4
    Form the mixture into scant 1 tablespoon balls. Refrigerate for 30 minutes. Serve.
