“While the main dish during the holidays is usually roast pork served along with arroz con gandules, plátanos, and pasteles, many people are going towards the grilled duck,” says chef Maria Germania Diaz. “Friends and relatives begin arriving later in the morning (this is an all day party) and while the duck is grilling there is lots of holiday music. Older women will be in the kitchen cooking side dishes that will accompany the duck. Children will be playing tag and getting in trouble. Guests bring traditional holiday desserts.”
