Named for the art and performers of flamenco, a flamenquin is a rolled breaded cutlet of pork, stuffed with parsley, jamon Serrano and occasionally Manchego cheese. A standard tapas bar dish, flamenquin is great dish to make ahead, and can be kept warm in the oven until you are ready to serve.
