Escabeche de Pescado (Peruvian Pickled Fish) is a classic Peruvian dish that combines seafood, hot peppers, and sweet and sour sauce to spicy perfection. This version, created by Chef Martin Morales and served in his acclaimed London restaurant, Ceviche, is also surprisingly refreshing.
