Tiradito is a raw fish dish
which originated in Peru. Unlike the similarly citrus-cooked chunky ceviche,
preparation of this creation is a combination of an Italian carpaccio and a
Japanese sashimi, with finely-sliced planks of pescado bathing in a zingy broth.
