Banana White Chocolate Walnut Cookies

    Chef Anthony Lamas offers up these moist cookies with white chocolate chips, walnuts, cinnamon and nutmeg and an unexpected ingredient: banana.

    mashed banana, about 2 1/2 large bananas

    ground cinnamon

    ground nutmeg

    cup
    chopped walnuts
    1/2
    cup
    white chocolate chips
    Directions
    Step 1
    Preheat the oven to 350F. Line baking sheets with parchment paper. Cream butter and sugar together until light and fluffy. Add egg and continue to beat until mixture is combined.
    Step 2
    In a bowl, mix mashed bananas and baking soda. Let sit for 2 minutes. Mix into butter mixture.
    Step 3
    In a separate bowl, mix together flour, spices, and salt and sift into butter and banana mixture. Mix until combined. Fold in nuts and white chocolate chips.
    Step 4
    Form 1/2 ounce cookies on prepared baking sheets. Bake for 11 minutes.
    Recipe Substitutions:
    For a fun variation, try swapping the banana for mashed pumpkin, zucchini or persimmons. You can also switch out the walnuts for any nut that you prefer.
