    Aborrajados is a delicious and simple dish made partly with sweet plantains, fresh white cheese and guava paste. It can be served as an appetizer, a snack, or even a dessert.

    Ingredients

    sugar

    cup
    milk

    A few drops of vanilla extract (optional)

    egg wash

    oil, for frying
    Directions
    Step 1
    Cut the plantains in half, and fry. Let cool.
    Step 2
    Mash the plantains with the cheese and guava paste.
    Step 3
    Mix the rest of the ingredients.
    Step 4
    Flatten out the plantain dough like patties, or make balls, and pass through the egg mixture.
    Step 5
    Fry in oil until golden, and let cool.
    Tip:
    You will need to buy plantains that are very mature, with an almost black skin. For the cheese, make sure you get one that won’t melt quickly.
