    Highly spicy, but with a sweet hot tang, 3 Pepper BBQ Sauce will satisfy everyone from the lovers of carne asada to Southern barbecue. Although named for its three pepper content, this recipe’s magic relies on puréed celery and onions, which give the sauce body and rounds out the flavor.

    large rib celery, chopped

    red bell pepper, seeded and sliced

    dried chile de arbol peppers, stems removed

    cloves
    garlic, finely chopped

    ketchup

    cup
    vinegar
    1/4
    cup
    brown sugar

    tablespoons
    hot pepper sauce, such as Tabasco

    tablespoon
    dry mustard powder

    kosher salt and freshly ground black pepper
    Directions
    Step 1
    Heat the olive oil in a small pot over medium heat. Add the onions, celery, red bell pepper, chile de arbol and garlic; sauté for 2 minutes.
    Step 2
    Add the remaining ingredients and season with salt and pepper. Reduce the heat to low and simmer for 15 minutes. Remove from heat and cool briefly.
    Step 3
    Using an immersion blender, or a food processor, purée the mixture until it is coarsely ground. Serve warm, or cool completely and then store in the refrigerator until ready for use.
