This holiday season, pack your bags and head south for a weekend of spa treatments, delicious holiday dinners, and special cooking classes at the Esperanza Resort in Cabo San Lucas, Mexico.

Mole, created by nuns for an archbishop’s surprise visit, is a chocolate-based sauce with chili peppers, spices, and nuts most commonly served over chicken or pork. This season get into the holiday spirit and join Esperanza’s executive chef Gonzalo Cerda as he teaches you how to make both the sauce and a few dishes.

Esperanza is resort with 57-rooms, 60 private villas, and 36 private residences, located on Baja’s Sea of Cortez. All of the hotel’s room open up to ocean views and there’s also an oceanfront restaurant, full-service spa, four swimming pools, and a private beach.

Every Tuesday and Thursday, guests can head to the La Palapa, the resort’s casual outdoor dining spot with an exhibition kitchen, to help gather ingredients and learn how to make mole. At the end of the class, guests are sent home with full bellies and a jar of homemade sauce.

Classes cost $45 and start in December.
