    Wild Rice Salad with Lemon Pepper Chicken

    Wild Rice Salad with Lemon Pepper Chicken is a complete meal with nutty wild rice, fresh cilantro, bright scallion, sweet yellow peppers and spicy lemon and pepper marinated chicken.

    boneless skinless chicken thighs

    cooked wild rice

    chopped yellow bell pepper

    Directions
    In a large bowl whisk together the lemon juice, olive oil, white pepper, black pepper, coriander and red pepper flakes. Add the chicken thighs, toss well to coat, cover with plastic wrap and marinate for 10 minutes.
    Heat a large skillet over medium-high heat. Add the chicken thighs and cook until a thin crust forms, 7 to 8 minutes. Flip and continue to cook until no longer pink, 8 to 10 minutes more. Transfer chicken to cutting board to cool slightly.
    Cut chicken into 1/4-inch pieces and put in a large bowl. Add the wild rice, yellow pepper, cilantro and scallion. Adjust salt and pepper to taste and serve at room temperature.
