    Whipped Coconut Sweet Potatoes

    Luscious and sweet, these Whipped Coconut Sweet Potatoes take a handful of ingredients and whip them together into a stand out side.

    sweet potato

    tablespoon
    coconut oil

    cup
    coconut cream

    tablespoons
    brown sugar, packed

    teaspoon
    vanilla

    cup
    unsweetened coconut chips
    Directions
    Preheat oven to 425 F. Line a baking sheet with aluminum foil and set aside.
    Using a fork, prick sweet potatoes on all sides and place on baking sheet. Bake for 40 minutes or until cooked through.
    Allow to cool enough to handle, then slice in half lengthwise and scoop out flesh into stand mixer bowl.
    Top sweet potato with coconut oil, coconut cream, sugar and vanilla. Using the whisk attachment, whip sweet potatoes until light and fluffy. Add a pinch of salt, whisk to incorporate, then adjust sweetness to taste.
    Plate sweet potatoes in a large bowl and garnish with coconut chips.
