Warm Farro Salad with Chayote

A simple, sweet and savory salad, this Warm Farro Salad features crisp chayote, caramelized apple, tender kale and creamy goat cheese.

small apple, diced

chayote, seed removed and diced

kale leaves, finely chopped
1 1/2
cups
farro, cooked

lemon juice

goat cheese, crumbled
Directions
In a skillet on medium heat melt butter. Add apple and chayote, stirring occasionally until apple has caramelized and chayote has softened.
Add kale leaves, and continue to stir until kale has wilted and is tender.
Add cooked farro and stir until all ingredients are evenly distributed.
Remove salad from heat and add lemon juice, olive oil, salt and pepper to taste. Stir to combine, top with crumbled goat cheese and serve.
