    Warm Butternut Squash, Papaya, and Jalapeño Salad

    This fantastic side dish combines savory, sweet, and spicy flavors to perfection between the papaya, butternut squash, jalapeño, and truffle oil. Serve as a warm winter side or double the portion and make it a main course.


    Ingredients

    diced butternut squash, about 1-inch pieces

    Olive Oil

    diced papaya, about 1-inch pieces

    small shallot, diced
    2
    cloves
    garlic, minced
    1/3
    jalapeño, seeded and julienned

    tablespoons
    white truffle oil

    sea salt

    pinch
    ground black pepper

    cup
    spinach leaves
    Directions
    Bring a medium pot of water to boil. Add butternut squash and cook until tender. Drain and set aside.
    Heat the olive oil in a skillet over medium heat. Add butternut squash, papaya, shallot, garlic, and jalapeño. Cook, stirring occasionally, for 2 minutes.
    Add white truffle oil and pinch each of sea salt and black pepper, gently stirring all ingredients.
    Add the spinach. Stir once, quickly remove all ingredients from pan to avoid wilting spinach, and serve.
