    Turkey Tacos on Butternut Squash Tortillas

    Is that a tortilla?! Nope, but it sure does look like one. Roasted butternut squash rounds make for the perfect tortilla substitute and add a wonderful sweetness to the earthy turkey meat.


    Ingredients

    butternut squash, peeled and sliced into 1/4 inch rounds

    extra virgin olive oil plus more for roasting
    1
    medium white onion, chopped
    1
    tomato, chopped
    5
    cloves
    garlic
    1 1/2
    pounds
    ground turkey
    1/4
    cup
    cocktail olives, roughly chopped
    1/4
    cup
    white wine (optional)
    1
    teaspoon
    salt-free adobo
    1
    teaspoon
    granulated garlic
    1
    teaspoon
    ground cumin
    1/2
    teaspoon
    paprika

    Directions
    Preheat the oven to 400 degrees.
    Place butternut squash on a parchment-lined sheet pan and set aside.
    In a large frying pan, sauté the onions in 3 tablespoons of olive oil over medium-high heat until soft. Add the tomatoes and garlic and cook for 5 minutes.
    Place the turkey in the pan and break it up with a spoon. Stir in the remaining ingredients. Turn it down to a simmer and cook for an additional 10 minutes.
    Meanwhile, rub the butternut squash slices with olive oil, salt and pepper and roast for 10 minutes. They should be knife tender but still hold their shape.
    Check the ground turkey for seasoning and add salt and pepper if necessary. Spoon the turkey into the butternut squash and enjoy!
