    Turkey Enchilada Casserole

    This Turkey Enchilada Casserole is hearty and full of flavor! Picante sauce and lime juice add festive flair to this classic dish. It's perfect for family meals or potlucks. 


    Ingredients

    10-ounce package frozen chopped spinach, thawed and well drained

    cup
    tomato sauce

    medium tomatoes, chopped

    large bell pepper, diced

    Lime Juice

    corn tortillas

    yogurt, plain
    3/4
    cup
    jack cheese, grated
    3/4
    cup
    Cheddar cheese, grated
    1/2
    cup
    sliced olives
    Directions
    In a large skillet, brown turkey with onion and garlic.
    Add picante sauce, spinach, tomato sauce, tomatoes, bell pepper, lime juice and salt. Blend together and simmer 15 minutes, uncovered.
    Lightly oil a 9″ X 13″ dish. Cover bottom and sides with six tortillas. Spread yogurt over tortillas. Cover yogurt with half of meat sauce. layer remaining six tortillas over meat and top with remaining meat sauce. Bake at 350º F for 30 minutes. Sprinkle with cheese and olives and bake for additional minutes.
    Remove from oven and let stand 10 minutes prior to cutting into squares to serve.
