    Turkey Avocado Lettuce Tacos

    This Saborea Uno Hoy fresh avocado recipe is another way to make the American Heart Association recommendations part of your healthy lifestyle. Traditional taco filling, but served in a lettuce leaf for a better-for-you twist.

    tomato paste

    water

    avocado (pitted and diced)
    1
    tablespoon
    fresh lime juice
    1
    tomato (cored and chopped)

    red onion (diced)
    1/2
    cup
    fresh cilantro (chopped)

    jalapeño (seeded and minced)

    butter lettuce leaves (washed and trimmed)
    Directions
    Heat oil over medium heat in large non-stick pan. Add onion, chili, cumin and salt. Cook, stirring occasionally, until soft. Add turkey and cook stirring occasionally until cooked through. Add tomato paste and water and simmer until liquid evaporates. Remove from heat.
    Combine tomato, avocados, lime, onion, cilantro and jalapeno is small bowl.
    Fill lettuce leaves with warm turkey mixture and avocado salsa, dividing evenly.
    Serve with fresh lime wedges if desired.
