    Tomato and Roasted Red Bell Pepper Soup

    This isn't your regular tomato soup: the addition of roasted red bell pepper rounds out the soup and gives it a new depth of flavor. 


    Ingredients

    Olive Oil

    cup
    chopped onion (about half an onion)

    cloves
    garlic, chopped
    3 1/2
    cups
    coarsely chopped tomato
    1
    roasted red bell pepper
    6
    cups
    water or vegetable broth
    1/2
    teaspoon
    salt

    freshly ground black pepper
    Directions
    Over medium heat, place a saucepan and add olive oil and onion. When the onion is soft and translucent, add the garlic.
    When the garlic begins to release its aroma add tomatoes, red bell pepper, water or vegetable broth, salt, and pepper.
    Cover and let simmer for 20 minutes. When the tomatoes are soft, blend with an immersion blender. Check for seasoning and serve with avocado toast.
