Tofu Bites (Bocaditos de Tofu)

Tofu is baked until crispy, and then spiced with a fresh tomato, onion, and cilantro salsa. A delicious small bite for vegetarians and non-vegetarians alike. Perfect for entertaining.


Ingredients

red onion

extra firm organic tofu

handfull of cilantro
1/4
chile jalapeño or serrano
1
clove
garlic, chopped
2
limes, juiced

tablespoons
Olive Oil

tablespoons
avocado oil

salt and freshly ground black pepper, to taste
Directions
Wash vegetables.
Cut the tomatoes and the onion into small cubes.
Cut the tofu into equal pieces into approximately 12 pieces.
In a bowl, combine the cilantro, jalapeno, garlic, lime, salt and pepper and let infuse for a few seconds.
Add the olive and avocado oil slowly. Then, add the onion and tomatoes. Taste and adjust seasoning.
Add the tofu, let marinade in the fridge for at least half an hour.
Remove from fridge. Bake the tofu pieces at 350ºF, or until lightly brown.
Place toothpicks to each cube and top with salsa.
