Three Cheese Habanero Grilled Potatoes

This recipe for Three Cheese Habanero Grilled Potatoes packs an extra flavorful punch with goat cheese, mozzarella, and habanero pepper jack cheese. They make a delicious side for any bbq.

Directions
Preheat oven to 375 F. Line a baking sheet with aluminum foil. Spray sheet with olive oil and set aside.
Cut each potato in half lengthwise. Spray generously with olive oil or cooking spray and sprinkle cut side with salt and pepper.
Place potatoes on baking sheet cut side up and transfer to oven. Bake for 30 minutes, until a fork can easily pierce the center of the potatoes.
Meanwhile, preheat your grill or grill pan.
Remove potatoes from oven and place cut side down onto grill.
Once potatoes have char marks remove from grill and spoon out center of potatoes and transfer to bowl.
To this bowl add goat cheese, mozzarella, 1 cup of habanero pepper jack, milk and 2/3 of green onions. Mix until fluffy. Adjust salt to taste.
Spoon mixture back into potatoes, top with remaining cheese and broil in oven for a few minutes until cheese is golden.
Sprinkle hot potatoes with remaining green onion and serve hot!
