    Tacos de Tuetano (Bone Marrow Tacos)

    If you think this dish is only for the adventurous, think again! Roasted bone marrow is a highly prized dish throughout Mexico. Beef marrow can be compared to beef-flavored butter on a corn tortilla. A sprinkling of salt is all Tacos de Tuetano need, but you can go ahead and add a spoonful of salsa. Bliss.

    beef marrow bones

    Directions
    Place bones in a large bowl and cover with cold water. Add 1 teaspoon salt. Let rest, in fridge for 2 hours and up to 24 hours. This will remove any blood the bones may have.
    Drain water and dry bones. Place in a roasting pan cut side down. Cook in a 450°F oven for 30-35 minutes.
    Serve bone marrow sprinkled with salt, with tortillas, and your favorite salsa.
