Sweet Wild Rice, Butternut Squash and Roasted Poblano Salad

Craisins, fresh cilantro and tangy lemon juice add an extra dose of sweet and savory flavor to this Sweet Wild Rice, Butternut Squash and Roasted Poblano Salad.

roasted poblano, deseeded and diced

raisins, roughly chopped

cilantro, roughly chopped

Directions
In a sauté pan on medium heat, melt coconut oil. Add wild rice, butternut squash and poblano. Stir until warmed through.
Transfer to a bowl and toss with craisins, cilantro and lemon juice. Season with salt to taste.
