Sweet and Tropical Funche

Sweet and Tropical Funche is warm and filling corn grits breakfast with sweet and tropical notes thanks to toasted coconut, bananas, and cinnamon.


Ingredients

polenta

coconut milk, full fat

sugar
1/4
teaspoon
vanilla

sliced banana

cup
unsweetened shredded coconut, toasted

cinnamon for garnish
Directions
Bring water to a boil with a pinch of salt.
Slowly pour in polenta, whisking until all water has been absorbed. (You can always add more water to achieve the desire consistency.) Check for seasoning.
In a separate pot combine coconut milk and sugar. Simmer until the sugar is dissolved and the milk has thickened. Stir in vanilla.
Serve the polenta in a shallow dish, drizzle with the coconut milk, top with bananas, shredded coconut, and sprinkle with cinnamon.
