    Stuffed Avocados with Shrimp and Vegetables (Palta Rellena) is an extremely gratifying dish made with shrimp is prepared seasoned only with lime juice, finely diced chili peppers, some red onion, salt, pepper, and cilantro

    julienned tomato

    fresh cilantro leaves

    Lime Juice

    black olives (Alphonso or Botija if possible), chopped

    small avocados, or 1 large

    Salt and Pepper

    Directions
    Combine the shrimp, tomato, red onion, cilantro leaves, lime juice, black olives, salt and pepper.
    Cut the avocado in half, discard the seed and peel. Cut a thin sliver from the back to keep them standing on the plate.
    Season with salt, and fill each half with the shrimp salad. Garnish with cilantro leaves and serve immediately.
