    Spicy Garlic Shrimp

    This is a great dish as either an appetizer or passed hors d’oeuvre or as the main entrée – you would just need to increase the quantity per person depending on which course you want to use it for.  I prefer to use a Medium-Large shrimp – the term used for this size is 16-20 Shrimp.  If you don’t feel like doing the work of cleaning and deveining, go ahead and use a bag of Frozen Shrimp – it will still be delicious!

    pound
    cleaned and deveined shrimp (tail on)

    cup
    Olive Oil

    cloves
    garlic (minced)

    crushed red pepper flakes

    lime (and its zest)

    salt to taste
    Directions
    Mix olive oil, garlic and red pepper together. Add Shrimp and marinate in a plastic container for an hour or up to 24 hrs. This garlic marinade can be made 2 days in advance and left to really absorb the garlic flavor.
    Pre-heat a skillet or sautee pan – get very hot. Add shrimp one by one – should sizzle as the shrimp touches the pan (add some of the garlic oil marinade to the pan if needed)
    Leave searing in hot pan until browned and a bit crispy – careful as hot oil will spray + jump off of pan.
    Season with a pinch of salt.
    Turn the shrimp over and sear the other side.
    Squeeze fresh lime juice over shrimp and sprinkle with a bit more salt. Cook another minute or 2.
    Remove from pan on to a waiting plate/platter – zest a lime over the shrimp and sprinkle with chopped cilantro.
