    Spicy Chipotle Salmon

    This gorgeous Spicy Chipotle Salmon is full of flavor and pretty enough to serve to guests, but is so quick it also makes a wonderful weeknight dinner during Lent or anytime of the year.


    Ingredients
    1
    small chipotle in adobo, seeds removed
    1/4
    cup
    fresh orange juice

    tablespoons
    honey
    2
    cloves
    garlic, crushed

    salmon fillets, skin removed, about 6 ounces each
    *
    kosher salt and freshly ground black pepper
    Directions
    Place the chipotle pepper, orange juice, honey, garlic and salt and pepper to taste in a blender jar. Cover and blend until well combined.
    Place the salmon fillets on a large dish in a single layer. Pour the sauce over the salmon and turn to coat. Let stand at room temperature for about 10 minutes.
    Preheat the broiler. Transfer the fillets on a foil-lined rimmed baking sheet. Broil until caramelized, 3 to 4 minutes.
    Carefully turn the fillets and continue broiling until the salmon is cooked through, 3 to 4 minutes more. Serve warm.
