Spicy Carrot and Cilantro Salad

This Spicy Carrot and Cilantro Salad recipe uses an underappreciated vegetable: the carrot. In this dish, they're the star. This carrot salad is exciting, fresh, and a snap to make. And it's a great twist on slaw recipes for summer bbqs. 


Ingredients

coarsely grated carrots

coarsely chopped cilantro

serrano chile, minced

cloves
garlic, minced

extra virgin olive oil

tablespoons
fresh lime juice

teaspoons
ancho chile powder

teaspoon
kosher salt, or more to taste
Directions
In large bowl, mix carrots, cilantro, Serrano chile and garlic. Add ancho chile powder and salt. Mix well.
Add olive oil and lime juice and mix well to combine.
Let sit for 30 minutes for flavors to combine. Serve.
