    Spiced Panela Pumpkin Skull Cookies

    A sweet and scary treat the little ones can enjoy as much as the adults, these Spiced Panela Pumpkin Skull Cookies are bound to be a hit thanks to having hearty pumpkin, sweet panela and flavorful chai tea.


    Ingredients

    unsalted butter, at room temperature

    sugar

    cup
    shredded panela
    2 1/4

    all-purpose flour

    cup
    unsweetened pumpkin puree

    teaspoon
    vanilla extract

    chai tea bags, leaves only

    icing pens, in different colors
    Directions
    g an electric mixer, beat butter until creamy. Add sugar and panela and mix until fluffy. Mix in flour and salt. Add pumpkin puree, vanilla and chai tea. Beat until everything is mixed well.
    Scoop shortbread dough onto a floured surface. Sprinkle a bit more flour on top; split into two portions and gently roll into logs, using additional flour as needed. Place in plastic wrap or parchment paper, wrap and refrigerate for several hours until dough is firm (or refrigerate overnight).
    Preheat oven to 350 degrees F. Line baking sheets with parchment paper and set aside
    Using a non-serrated knife, slice dough into 1/4-inch-thick discs. Bake 20-25 minutes, or until cookies are lightly browned on the edges. Immediately move cookies to a wire rack; let cool for 10 minutes.
    Once cool, decorate using icing pens to create colorful and spooky skull designs.
